What very fancy food we had last night! 
I could have arranged the squash a little better, but I was hungry and could hardly wait to fall upon the meal like a one-woman horde of locusts. So here’s what we had:
FRIED YELLOW SQUASH
Dredge slices of yellow squash in flour mixed with seasonings (guess what I used–yes, Jane’s Crazy Mixed-Up Salt, you win) and fry in a small amount of oil until browned on both sides. Drain on paper towels set on rack.
SPINACH CASSEROLE
Butter small casserole dish. Defrost frozen spinach or cook fresh spinach until soft. Into spinach, cut up onion, bell pepper and mushroom. Mix in some cheese and seasonings. I used marjoram and salt and a little mustard. In a 1-cup measuring cup, break one egg, then add milk to equal 1/2 cup. If your dish is bigger than mine or you like more, use 2 eggs and fill to the 1 cup line. Mix well. Put spinach mixture into the casserole dish. Pour the egg/milk mixture over it. Cover loosely and bake at 450 for about 45 minutes.
In other news, we’ve entered the 21st Century and now have high-speed! That means I can finally follow Leslie R. Lee’s blog and look at his fabulous pictures! W00t!!!

The farmers’ market is winding down, but there are still a few things–sweet potatoes, if you can get there in time.

I was lucky to get to the meeting at all last night. It was one of my bad days–I’m not sure I would even show up on film if somebody had snapped a picture last night. lol! I bet I missed a lot of good stuff, having to leave early. 🙁
