You Say #Vegan Food Is Boring? Check This Out!

So this happened. This is totally my new favorite thing.

caulsnowsquashOkay, the yellow this is yellow squash, sliced, dredged in seasoned flour, and fried in vegan margarine until browned on both sides.

The green bits are snow peas fried in sesame oil with slivered almonds and sesame seeds, with soy sauce on.

But the red stuff …. Oh, the red stuff …. That’s barbecued cauliflower. Yes, cauliflower, and is it ever good!

BARBECUED. CAULIFLOWER.

You cut the cauliflower into florets (or, if you’d rather, slices). Mix flour, water, and spices (I use Jane’s Krazy Mixed-Up Salt, of course, because I love that stuff). Coat the cauliflower pieces in that, spread them on a greased baking pan, rolling them around to coat them in oil, and bake them at 550F until they start to brown. The recipe I read online said 15 minutes, but it took mine closer to 30 minutes in the toaster oven. THEN roll them in barbecue sauce; you can make your own, but I use Sweet Baby Ray’s Honey Barbecue Sauce, because yes. Broil that for maybe 5 minutes, longer if you like your bbq charred.

OMG, it’s so good!

So, if I tell you I’m practically vegetarian and often vegan, don’t cry for me, Argentina, ’cause I’m eatin’ GOOD.

    i have been eating like this for many years. i never new i was vegan.
    full disclosure i’m not. i still eat a little meat, maybe 2 – 3 times a month. and i still eat a little fish and i;ll never stop eating eggs. ah well…

      Well, if everybody just cut back on the amount of meat we eat, we’d be healthier and food animals would have room to be raised more humanely.

    I completely agree with eating less meat and there is a lot of great vegan recipes now online that shows you how to put great ingredients together. Cauliflower is definitely an amazing vegetable and you can do lots with it. For instance, I recently made cauliflower kimchi fried rice and it was delicious!
