This is SO GOOD, you wouldn’t believe it!
I have a wonderful new toaster oven, which here is its pitcher:

She’s a Cuisinart Custom Classic Toaster Oven Broiler. I resisted getting a new toaster oven for years, because the old Magic Chef worked JUST THE WAY I WANTED IT TO. Actually, I got two or three new ones, but I hated them and gave them away. Finally, Charlie put his foot down and asked. That’s how we put our feet down in this family: we ask. Yes, we do live in the American Midwest; how did you know?
ANYWAY, she works a treat, as witnesseth this baked cauliflower.
You take a head of cauliflower, cut out the stemmy bit, and cut a few thick slices out of the middle. Save the leftover bits for something else.
Spray or brush both sides of the slices with olive oil and sprinkle with seasoning. As usual, I used Jane’s Crazy Mixed-Up Salt.
Bake at 400F for about half an hour, or until it’s as tender as you like.
The stuff next to it is vegetable stir-fry with Pad Thai sauce. Also good, also vegan.

And the Crazy Jane Salt. Oh,, yeah.
We also like Spike. Apparently, Spike has some history to it; it’s been around a while. Used it a lot in the ’80’s,then couldn’t find it for a time;; now you can again!

Gonna have to look up that Spike stuff — sounds good!

March 16, 2016 at 1:11pmI even like the mushy ones, especially mashed cauliflower: Cook it until it’s completely soft, drain it, mash it, season it with butter, salt, pepper, garlic (if desired), and cheese. It’s really really good!
