Daughter #4, the estimable Sara Marian, visited yesterday for Father’s Day. Well, she wasn’t the only one, but she’s the only one who stayed for supper. She’s one of the ones who got us started on vegetarianism; she’s no longer vegetarian, but she gamely suffers for her past and eats veg when she visits.
We had this.
That’s garden pasta: pasta made with carrots, spinach, and … wheat, I guess. While that was cooking, I chopped onions and mushrooms and cut asparagus into bite-sized yummies and sauteed them all in olive oil. When the pasta was done, I mixed in some home-made pesto (with cheese, which makes it vegetarian but not vegan) and the veg. There’s a world of vegan pesto recipes out there, though, so that’s an option.
A WRITING PROMPT FOR YOU: An ex-vegetarian has dinner with people he/she converted to vegetarianism.
