When A #Vegan Eats Light

So Charlie said, as he often does during the summer, that he wanted to eat light. Terrified of another dish of lettuce and beans, I offered to make supper. We had this.

AsparagusSpudsI parboiled the red potatoes, then roasted them at 400F for about forty minutes. Meanwhile, I split the stems of the biggest asparagus spears and pan-roasted them in vegan margarine, sprinkled with Mrs. Dash. When they were almost done, I toasted the almonds in the same pan.

Nourishing and satisfying, and Charlie found it sufficiently light.

    Although I would normally associate a single-patty burger with eating light, I like everything on that plate. I would eat light like that, on a day like today, where I am eating more for lunch than I normally would. I’ll give you a thumb-up ๐Ÿ™‚

    I would find that plate light, even as someone who follows an older Weight Watchers diet (usually). And I would miss the cheese. Badly.

      I’m usually all about the cheese, Alana, but I just didn’t need it that night. We had eaten a big lunch, and this was plenty to tuck into the empty corners that evening. We’re not vegans or even vegetarians, we just seem to eat less and less meat and fewer and fewer animal products. When I’m out, though, don’t stand between me and the fried chicken or I might mistake you for a drumstick! lol
