Squersh Soup #vegan

Squersh is me-talk for squash. I don’t know why it amuses me to call it squersh, but MomGoth has to take her amusement where she finds it.

We had some Siberian kale that was past its best-by date, and the tag ends of some zucchini and yellow squash, and the herbs are coming in strong, so I made some soup.

SquashSoupGot some mushrooms, bell peppers of various colors, and onions in there, too.

Added water, veg boullion, red wine, and a little miso paste.

    I’m with you on throwing it in the pot and calling it soup. Or actually, I’d probably call it stew. The main person I’m cooking for, other than self, is cutting back, so I’m left with a conundrum. What do I do with the leftovers of the leftover stew?

    Yeah yeah. I freeze it. And put it in next to the other bags of leftover stew. Maybe I need a different plan?

      If you have leftover stew, you serve it over rice or noodles, or thicken it and bake it in a pie, or top it with mashed pertaters and cheese and call it Rover Cottage Pie. heh
