Yesterday at Fatal Foodies, I posted about this broccoli soup I made that was too salty. So the next day, I cooked some rotini and used the leftover soup as a sauce.
And I had some of that rotini-and-sauce left over.
I also had some hominy left over from another meal.
And we fell off the turnip wagon and bought a sixth-part share in a pastured pig, so we had some bacon.
So this happened:
I chopped up some of the bacon and cooked it in a pot, added the leftover soup and hominy, some water, and some chicken bouillon. Just before I took it off the heat, I added a dash of white wine.
THAT was good.
Oh, that dark stuff on the plate, next to the mini tortillas — that’s a mess of morel mushrooms. Yes, I’ve been out on my spring hunt.
You find one.
Then you find more
and more.
Then you find none, and the season is over for another year. But what feasting, while it lasts!

That soup sounds good, too. Makes me think maybe I should tinker with rotini and hominy, almost like a fajole gone wrong… I’ll let you know, mmhm. Next week though. Got this week’s menu all done.

March 29, 2017 at 1:24pmThe soup looks good. If I’m not mistaken, hominy only has a 1-degree separation from grits, but you more than made up for it with the bacon. My grandmother would be proud of your making sure to get the most out of that soup 🙂
