A Tale of Two Squash – Thing Two #Vegetarian

I posted yesterday at Fatal Foodies about what I did with the squash guts from two squasheses. Here’s what I did with the flesh.

#4 Daughter, the amazing Sara Marian, gave me a recipe for roasted squash. She also told me that, if I would put my acorn squash into the microwave and nuke it for 2 minutes, I could slice through it easily. She was right!

What made it even easier was: Charlie volunteered to cut both squash up for me. Yay!

Roasted Squash a la the Amazing Sara Marian

  • diced acorn and butternut squash
  • olive oil
  • garlic clove, minced
  • sage, rosemary, and other herbs
  • smoked paprika
  • Parmesan and feta cheeses

Preheat oven to 450F. Toss squash cubes with olive oil, garlic, herbs, paprika, salt, and pepper. Roast 30-40 minutes, stirring halfway through. Add cheeses and eat!

Now, Dan is gonna say it would be better with some sausage in there. I would have thought so, too, BUT NO! It was SO bursting with flavor, anything else would have been too much. Honestly, this is SO GOOD!

    Mmmmmmm, sauuuusaaaaaaage.

    This does look good, except that I do not like Feta cheese, but my wife does similar things with squish. And yes, I think the plural of squash is squish.

      Oh! I fort it was squasheses. Siri, make a note. “Okay. I’m making a note. The plural of squash is squish.”
