When I say Soup of Yesterday, I don’t mean we had it yesterday; I mean it was at least half leftovers. Because raised by people who had been through the Depression and waste not, want not.
Soup d’hier
The new stuff:
- sausage
- chicken bouillon
- water
- cumin, onion powder, garlic powder, cilantro
The leftovers:
- baked potato
- hominy
- breaded okra
- kale chips
Cook the sausage. If it’s greasy, pour off almost all of the grease. Stir in the spices. Add water and bouillon. Cut the peeling off the potato and cube the innards. Add it, the hominy, and the okra to the pot. Crumble the kale chips in. Cook until it’s all hot through, the bouillon has dissolved, and the kale chips are soft.

It was so good, Charlie actually said, “Good soup.” It was like that scene in Disney’s Cinderella, where the mice and birds make a ball gown out of scraps and discards. Luckily, I don’t have any wicked stepsisters to take it apart again. No, wait, it was a wicked stepmother, and ugly stepsisters. Whatever. You know what I mean.
