Fish Salad?

I get this — or something vaguely like this — at Beef O’Brady’s. There, it’s called a Big Catch Salad. There, it’s an actual salad with a BIG chunk o’ fish on top, garnished with rings of red onion and a sprinkle of Parmesan cheese, your choice of salad dressing.

Here it looks like this:

Just plain lettuce, carrot sticks, no onion, no salad dressing, and I forgot the Parmesan cheese. It was still good.

Why so plain?

Charlie likes just plain lettuce and carrot sticks, can’t tolerate raw onions, went “Ugh!” when I suggested salad dressing on fish, and I FORGOT THE CHEESE, OKAY?

At Beef’s, you have a choice of how you want your fish prepared (I forget the other choices, ’cause I always get this).

As for the fish, it couldn’t be easier:

Lemon Pepper Fish

I started with a frozen filet of tilapia. Frozen. While some margarine (or butter, if you do butter) heated in a pan, I unpackaged the filet and sprinkled it with lemon pepper and salt on one side. Put the fish into the pan, seasoned side up, and leave it for seven minutes. Flip it and leave it for another seven minutes.

Charlie and I split that one filet between us, so why am I so fat, that’s what I’d like to know. Could it possibly be that my calorie expenditure makes Jabba the Hutt look like Speedy Gonzalez?

Possible. Possible.

I use broiled salmon or pan-fired tuna (in honey mustard sauce), fully incorporated in my salad. Crunchy, colorful, and nutritious.
(I never have left over tilapia- but the tomatoes and olives that it gets cooked in serve as great adjuvants to quinoa.)

Hmmm, we never have fish at home, cuz wife doesn’t eat fish, so not a good option. I frequently get fish when we eat out, but I’ve never seen fish salad. I have seen, had and really like fish tacos, so I’m guessing I’d like this.

This is a dish my husband and I both like to eat. Fish with veggies is underrated. I’ve done this with any mild flavor fish, but even some occasional ahi, oh yes, it’s a winner. I like to do some grated carrots, and always too much salt and pepper. Too bad my kids don’t like COOKED FISH. I dunno, I just dunno.

I dunno, either, Joey. Kids today! With their awful music and their body piercings and their raw fish. ANYWAY, I’ve been resistant to stuff like fish soup and fish pie and fish tacos, but this salad and the shrimp tacos I had the other day are winning me over.
