Good Summer Mess

I love summer! Hate the heat, the humidity, and the bugs, but I love making supper out of whatever’s fresh, ya know?

So this because I had these:

Leftover rice, cherry tomatoes, okra, and a little Old Bay Seasoning. O.M.G. SO GOOD.

I can’t believe I hated okra for years and years and years. (Okay, and years — so I’m old — so sue me.) I’ve changed my tune, and now I luuuuurrrrrrv it! The tomatoes were from our plants; the okra was from the farmers market.

Ahhhh, summer!

    I can’t get emotional about okra. I’ve never hated it, but I don’t come anywhere near loving it. If it’s on the plate, I’ll eat most of it.

    Not entirely. This time of year, veggies and rice/pasta/noodles are often found on the menu.

    I did something similar yesterday. Leftover rice, leftover broccoli, leftover sweet potatoes- added a little olive oil, ginger, and oregano. Voila!

    I am ALL ABOUT the fresh stuff right now. I’m gonna overdose on stone fruit and tomatoes, or die tryin! šŸ˜› Haha! Best part of summer!

      You are SO RIGHT! I miss our garden, but Charlie sez, why should he break his back when there are two farmers gardens in town? Point.
