Mildred’s Orange Pecans

Here’s a really quick and easy — and delicious — snack. I love these. The best part about them: pecans and orange juice. Healthy, or what? It’s so quick and easy, it’s one of the recipes on my Alligator Sandwiches recipe page. I call these recipes Alligator Sandwiches after the joke: “Waiter, bring me an alligator sandwich, and make it snappy.”

This recipe was cut from the newspaper by my dearest friend in my new hometown, Mildred Kepner O’Bannon, and passed on to me. My late grandfather loved them. I make them every year in memory of both of them — and because these are absolutely delicious!

  • 4 cups pecans
  • 1 cup sugar
  • 1/4 cup orange juice
  • 1/8 tsp salt
  • 1 Tbsp orange zest or grated rind

Bring sugar and juice to a boil; add salt and rind. Add pecans. Boil till liquid is absorbed. Cool on waxed paper, separating kernels.
