Four on a Thai #Food #Recipe

So #4 Daughter, the amazing Sara Marian, and her equally amazing life partner, Zakary Kendall, came to dinner. They are neither vegan nor vegetarian, but the only meat I had in the refrigerator was one Amish chicken thigh. The people who raised the chicken were Amish, I mean. Although, for all I know, the chicken was Amish, too. I imagine it probably lived pretty simply, and I sincerely doubt it drove a car. Or a buggy, come to that.

ANYWAY, I thawed the chicken and roasted it (’cause roasty anything is better, amIright?) and chopped it into small pieces. And I made this Pad Thai recipe, which Charlie tore out of the Electric Consumer magazine.

I used the chicken in place of shrimp or tofu, and I didn’t add the red chili paste, since Charlie doesn’t like things too spicy. But I mashed up a chipotle cube in a little water and put that on the table in a little bowl. And of course I had Sriracha sauce on the table! I didn’t do the cilantro or the lime wedges, either. I threw some leftover Jasmine rice in there, too

This recipe is way fussier than I usually roll, but it went over big, and it really didn’t take all that long to fix.

    That does look pretty good. I like the bit about the Amish chicken.

    I should credit you with getting me to order a Sriracha Chicken dish at my regular take-away place. I saw that and thought “that’s that stuff Marian talks about” and decided to go for it. Pretty good stuff, so thanks!

    That sounds pretty goood. I buy a bottle of sriracha almost every grocery store trip.

      Wow! You must eat it even more than I do! –Wait…How often do you go to the grocery? ‘Cause if it’s once a year, we may be tied. 😀
