Haitian Chicken

I forgot to take a picture! Mine looked exactly like it was supposed to, which is a wonder and maybe a first.

The reason I decided to make this isn’t important, but it helped that it was quick and easy (two of my favorite qualities in a recipe). I also need to use up that Amish chicken I bought a few weeks ago and stashed in the freezer. Won’t keep forever, you know.

The recipe came from Climbing Grier Mountain, a wonderful website I discovered while hunting for a quick and easy Haitian dish. I followed Lauren’s recipe, except that I didn’t use pepper and only used a dash of red pepper, since Charlie can’t take much heat in his food. Some, but not a lot. I figured anybody who likes it how could always add Sriracha at the table.

It was SO GOOD!

Mostly chicken and tomatoes, with just onions, garlic, white wine, and pepper powder. So simple, and so delicious! I served it with black beans and rice flavored with a little chili powder and a lot of cumin.

      I know! I plan to make it again this weekend. Maybe I’ll remember the snappy this time.
