Phee Phi Pho Phum

Our #4 Daughter, the amazing Sara Marian, introduced us to pho, and Charlie and I both love it. Surprisingly, there is no Vietnamese restaurant in our little town, so I decided to make some myself. Pho, I mean, not a Vietnamese restaurant.

I started with a pho soup base.

Added a little hoisin sauce. As it turns out, that was a mistake; Charlie thought it made the soup too sweet.

Here was the result.

So, to the broth, I added softened rice noodles, mushrooms, cabbage, bean sprouts, green onions, water chestnuts, and carrots and asparagus “noodles” made with a vegetable peeler. Of course, I added Sriracha sauce to my bowl, because Sriracha sauce.

      It was REALLY good! You could throw in some beef, chicken, tofu, or pork, if you wanted to. Me, I LOVE tofu, but I forgot I had some in the freezer.

    We’ve got a couple of places down here with a decent pho game. Our local Thai restaurant does a Pho-nomenal job. If you ever wander through Chattanooga, we’ll take you around there our treat.

      That sounds like a good deal! There used to be a great Vietnamese/Korean restaurant in Salem, Indiana, of all places. That’s where I had my first and (so far) best pho. But, alas, the owner retired and the place closed.
