ANYWAY, here’s that supper I said I’d share.
In the center, is Stove-Top Stuffing Cornbread stuffing, which is, I think, chicken flavored, so not vegetarian. You could get a vegetarian version, though, or make your own. I had one zucchini and one yellow squash. I split each of them, sprinkled them with olive oil, Italian seasoning, and Parmesan, and pan-fried them slowly until they were tender.
SO GOOD!
We had a salad, too. Just sliced cucumbers, I think.
