A Mexican-ish Summer Feast #Vegetarian

Still lovin’ that farmers market freshness, but sometimes I do a dish without it.

The other day, we had this:

Yeah, pretty much all from the grocery:

Black beans and rice, “fiesta” corn from a can, avocado sprinkled with lime juice and seasoned salt, a little shredded cheese on top of the beans, rice, and corn.

Highly satisfying, even if not local.

I’m posting today at Fatal Foodies about a meal that was all fresh and local.
