Eggplant Sammich #vegetarian #food

I loves me some eggplant. Charlie is kinda like, “Meh.” Lucky for him, I don’t like storebought eggplant, so he only has to eat it during the summer. All summer. Every week. At least once.

Also lucky for him, I’ve found ways that he likes. This way, he really, really likes.

eggplant sammichSlice an eggplant lengthwise as thin as you can. I use a mandolin. WORD TO THE WISE: PEEL THE EGGPLANT FIRST. I didn’t peel it, and it would neither cut nor be bitten. Not a pretty sight.

Dip the slices in melted vegan margarine (or butter). Dredge the slices in seasoned bread crumbs, Panko, or (my favorite) crushed cornbread stuffing mix. Fry in more margarine or butter until browned on both sides.

Spread salad dressing (yuk) or mayonnaise (yay!) on bread. Put a slice of cheese on (this was Havarti), and layer on the eggplant. Top with another spread slice of bread.

Toast the sandwich in the skillet until the cheese is soft.

BOY, this was good!

    hey marian..i love eggplant and i always do experiments with it..and today you have given me one more reason to love eggplant. i will surely try it at home.

      Sonika, I’m always looking for good eggplant recipes, although my husband would be happy with eggplant Parmesan. I like that, too, but I like to try new dishes. 🙂
