I loves me some eggplant. Charlie is kinda like, “Meh.” Lucky for him, I don’t like storebought eggplant, so he only has to eat it during the summer. All summer. Every week. At least once.
Also lucky for him, I’ve found ways that he likes. This way, he really, really likes.
Slice an eggplant lengthwise as thin as you can. I use a mandolin. WORD TO THE WISE: PEEL THE EGGPLANT FIRST. I didn’t peel it, and it would neither cut nor be bitten. Not a pretty sight.
Dip the slices in melted vegan margarine (or butter). Dredge the slices in seasoned bread crumbs, Panko, or (my favorite) crushed cornbread stuffing mix. Fry in more margarine or butter until browned on both sides.
Spread salad dressing (yuk) or mayonnaise (yay!) on bread. Put a slice of cheese on (this was Havarti), and layer on the eggplant. Top with another spread slice of bread.
Toast the sandwich in the skillet until the cheese is soft.
BOY, this was good!
