“What the heckaroo are Navy Cakes?” I can hear you asking it, all the way over here in the back of beyond.
Well, I’ll tell you: Navy Cakes are what I made for supper the other night when I couldn’t think of a recipe I wanted to look up and decided to make my own.I took a can of Navy beans (that’s the Navy part) and mashed them up. Then I mixed in some Mrs. Dash seasoning blend, an egg, and enough chickpea flour (because I have some and because I love felafel) to hold it together. I made it into cakes (that’s the Cakes part), covered it with plinko — no, that isn’t it … panko! That’s it: panko. I covered it in panko and fried it in olive oil.
Boy, were they good! I plan to make these babies again, sometime, with whatever kinda beans we have sitting around in cans.
