Variations on a #Vegetarian Theme

Charlie and I are very fond of a dinner of pasta and salad. This is not to be confused with pasta salad, which we can take or leave. Sorry, pasta salad fans. It’s liked, but not well-liked.

Pasta and Salad 1Here’s one we did, of vegetable rotini (tomato and spinach), chunky garden style spaghetti sauce, and fresh mozzarella. The salad is lettuce, pears, pecans, and feta cheeese dressed with honey French.

pasta and salad 2This one is spinach and mushroom ravioli with that chunky garden style sauce and shredded 3-cheese Italian blend. The salad is lettuce, mushrooms, toasted almonds, chow mein noodles, and blue cheese / cranberry crumbles.

    I’m so paranoid about leafy greens from the store that I, right now, am in a phase of not getting ANY.

    On the other hand, pasta with stuff is a serious favorite!

    Enjoy your great-looking veg food! Thank goodness I’ve still got a couple tomatoes left!

      I forgot about store greens being sketchy. Livin’ on the edge — that’s life on Allen’s Alley.

    If you buy fresh, not bagged greens, are careful, and wash carefully, you are safe. I like pasta and salad. But I put lots of tomatoes, and a little hamburger, in my salad. And some frozen veggies, and a can of beans.

      I like dinner salads, too! I love a Chef’s Salad, meat and all. And I could founder on taco salad!

        Chef salad with fresh cooked chicken breast, small cubes. One chicken bit feeds 2!

    I love pasta, but if you ask me which i prefer between these 2 salads, i choose the first one but without spinach.
