A Tale Of Two Tomatoes Part 2 #vegan

Part 1 was on Fatal Foodies yesterday: Fried Green Tomatoes.

So we had all these wee-to-smallish green tomatoes, many of them too small to bread and fry. So Charlie sez: “I like pickled green tomatoes.”

So this happened:

Wash the tomatoes and put them into a clean jar. I cut the larger ones to about the size of the smallest ones.

Bring to a boil:

  • 1/2 cup salt
  • 2 cups vinegar
  • 3 qts. water

(cut that down, depending on how many tomatoes you have!)

Pour the boiling liquid over the tomatoes. Seal the jar(s) and turn upside down. When cool, turn back right-side up.

We haven’t gotten into these yet; saving them for the winter.

      Dunno, we haven’t tried them. We’re saving them for the winter, when we’ll appreciate them more. πŸ™‚
