A Tale of Two Gnocci #vegan

I’m crazy about gnocci. I’ve even been known to make them, but I also buy them sometimes, because … just because, okay? Don’t judge.

We’re pretty light eaters (difficult to tell from my girth, but we are — that’s what happens when you move as little as possible: doesn’t take many calories to turn you into Jabba the Hutt). I lost my place. Oh, yeah, we’re pretty light eaters, so one package of gnocci does us for several meals. Here are two:

While you heat water and boil the gnocci (you cook them for about 3 minutes), heat vegan margarine in a skillet. Add sliced mushrooms and brown them. Add the drained gnocci. Chop some parsley and add that. Throw in some peas (these were canned because Charlie prefers canned to frozen — go figure). Dan Antion is free to add some chopped ham. Or bacon.

Boil a whole sweet potato. Take it out of the water and cool it and peel it and cut it into pieces. While you reheat the water and use it to boil the gnocci, heat some vegan margarine in a skillet and brown the sweet potatoes. Add the drained gnocci. I think there’s some chopped fresh sage in there, too. Dan Antion … pork chop. Or bacon.

    Ha – thanks for the mention. I’ve had gnocci in a meatless meal. It’s pretty filling so I don’t think I would mind. I prefer frozen peas to canned, but I like them either way. I think I’d rather recipe #1. Sweeet potatoes and gnocci might be a bit too much mush ๐Ÿ™‚

      I prefer frozen peas, too, Dan. Talk about mush.

      The sweet potatoes were good and crispy on the outside and the gnocci are pretty firm, so it turned out to be a really good combination. But #1 was also really good. ๐Ÿ™‚

    Sweet potatoes! Yum!
    Should really eat them more often. Orange food. Great for color wheel cooking.

    Gnocci #2 looks amazing. I really can’t get enough sweet potato! I like putting sweet potato in red curry. Yum!
