Salmon Melt #Pescatarian

So Charlie and I had this baked salmon, which I posted about yesterday at Fatal Foodies. But we could each only eat half of our salmon.

So-o-o, we had Salmon Melt for lunch, and here’s what it looked like.

Salmon Melt

  • bread (this was multi-grain)
  • butter or margarine
  • leftover salmon
  • mayonnaise
  • cheese (this was Gruyere)

Butter the bread and put it on a baking sheet. Arranged the salmon on the bread. Blob some mayonnaise on the salmon, and top that with some cheese. Bake it at 400 until the salmon is warm and the cheese is melty.

This was delicious! The salmon was better than it was the first night; it was melt-in-your-mouth tender. I credit the mayonnaise. I just do.

Yes, that’s a Christmas bread plate it’s on. I use them all year ’round. I think they’re jolly.
