“I Guess Spinach CAN Taste Good” #Vegetarian

So I bought a can of spinach — or, as people who have had children call it, pinish. Yes, a can. Don’t judge.

We had it just heated up and buttered, which I actually like, but Charlie doesn’t. Fortunately, his motto is Everything doesn’t have to taste good to eat it. That’s been his motto since he married me, anyway.

The next day, I made this almost-a-frittata.

macsspinIt’s only almost a frittata because a frittata wants you to cook it partly on the stove and partly in the oven, and I’m like no. Heat up the oven for 10 minutes of cooking? Like no.

So I put vegan margarine in a skillet and melted it, then spread the leftover spinach out over the bottom of the skillet. I beat some eggs with a little milk, added salt and marjoram (wish I’d added nutmeg, too) and poured that over the spinach. When the eggs were set up, I slid the whole thing out of the skillet onto a plate and flipped it over to set the other side.

And Charlie said, “I guess spinach CAN taste good.” So I guess this is a one-liner Wednesday. Only, you know, not.

    Spinach is a favorite topping for pizza, along with mushrooms, grilled chicken, and bacon!

    It also goes well into cheesy tortelini.

      We love fresh spinach, but I even love the canned stuff. It’s like canned asparagus: Just think of it as an entirely different vegetable.

        I agree. They’re two entirely different things. Or, in the case of asparagus, four entirely different things.

    Dishes that want you to use two means of cooking need to be told “this isn’t about you!” I’d put that in with the clothes that say “hand wash” – like that would ever happen if I were in charge.

    I like spinach, some of the time and I can’t stand it some of the time. But, I always liked Popeye, so…

      When I was little, spinach made me disgustipated, as Popeye would say, even though Popeye was who I wanted to be when I grew up. Not that I was a man in a woman’s body, I just didn’t see any reason why a woman couldn’t be Popeye if she wanted to be.

    I often heat canned spinach in the microwave with a dollop of butter or margarine, just to avoid sharing the frozen broccoli/cauliflower my husband prefers. My favorite spinach though is fresh and I use it on sandwiches instead of lettuce, on pizza, in salad, and cooked quickly in a few drops of water to eat plain. Spinach tastes so much better than broccoli!

      I like spinach AND cauliflower AND broccoli. Not so crazy about any of them frozen, though. I love ALL the ways you list of eating ‘pinish!
