One of the dishes we got on our trip to Leitchfield was Artichokes Pancetta, but I didn’t have any pancetta when I made mine, so mine was vegetarian by default.
Pancetta, in case you don’t know, is a pork product kinda-sorta like bacon, but not really. Later, I found out that the Jay C in our little neck of the woods does have it, but I didn’t know that so I didn’t buy any.
I did buy a small jar of marinated artichoke hearts, which I drained and chopped into big chunks and spread in the bottom of two small dishes. Topped that with a whackin’ great hunk of Italian mix cheeses (Romano, Parmesan, and Asiago) and some fresh parsley and rosemary and (because I didn’t have any fresh) dried oregano.
I baked it in our toaster oven at 350 for about 15 minutes, until the cheese melted and started to toast.
I do love baconish things, but I actually preferred this without. It was REALLY GOOD, you guys.
