Sugared Cranberries — Beautiful For the Holidays!

Our #1 Daughter gave us this recipe, and I also looked it up online to make sure I was doing it right. It’s super-easy, it only has three ingredients, and it looks smashing! Taste … ~wiggles hand back and forth~.

If you like the bitterness of raw cranberries, you’ll probably love this, coupled as it is with the sweetness of sugar. Sometimes my mouth is in the mood for it and sometimes it isn’t. As the Crazy Russian Hacker says, “You be the judge.”

Sugared Cranberries

  • equal amounts of granulated sugar, water, and cranberries.
  • sugar for rolling the cranberries in after they soak

Combine sugar and water in a saucepan over a low heat, stirring while bringing it to a simmer. Remove from heat and stir in rinsed cranberries. (If you have extra cranberries, that’s okay.)

Pour mixture into a bowl, cover, and refrigerate 8 hours or overnight.

Drain the liquid off, reserving it for some other use, if you want to. Make cranberry mint tea or something.

Roll the cranberries in sugar — regular or super-fine (castor). Spread them in a single layer on a baking sheet and let stand at room temperature for an hour or until they dry. Store in an airtight container in a cool place or in the fridge.

How do they look? Take a gander at this:

“Equal amounts of granulated sugar…” That’s enough to take me back to my Pixi-Stix days of childhood. Probably the only way I could eat cranbeeries.

Oh, I love jellied cranberry sauce and just about any kind of cranberry salad you could name.
