First, it’s the beginning of the month, so there’s a new Hot Flash on the Hot Flashes page.
Okay. Food.
This was quick and good and filling and tasty on a cool day.
I heated some olive oil in a pot and toasted some chili powder and cumin in it. Added a cup of rice and stirred it around. added some leftover black beans, leftover corn, two cups of water, one large vegetarian bouillon cube, and onion powder. Brought it to a boil, reduced it to simmer and covered the pot, stirring it every once in a while. Topped it with a little soup cream and shredded cheese.
Chips, of course!

November 1, 2017 at 8:57amThat looks and sounds pretty good. I’m not a big fan of beans, but since you added the corn, I’d be interested. Again, no pictures on Firefox (but I knew enough to try Chrome).

November 1, 2017 at 12:11pmSee, Charlie is the opposite: Not a fan of corn, but he’ll accept them if they’re mixed with something he loves — like black beans. 😀

November 1, 2017 at 1:34pmI do the same, but substitute crushed tomatoes for the corn (and add in some jalapeno peppers).
Some like it spicy…

November 1, 2017 at 2:53pmNow, that sounds good, if I left the corn IN along with the tomatoes, and substituted chipotle for the jalapeno. 🙂

November 1, 2017 at 10:17pmI add some salsa, and grilled meat of some kind and have plenty of extra salsa on hand and call it meal! So, I suppose what I’m sayin is you got a good start of a heck of good meal there. 🙂
Since I’m not opposed to having a vegetarian meal a few times a week I’d need more beans less rice. My preference would be more pintos, to black beans, and He-Man would want more Black Beans less Pintos so two pots would be required for that. 🙂
Salsa is a must for a dish like this.

November 2, 2017 at 7:55amSadly, Charlie doesn’t like the last salsa I got, and he won’t let me throw it away, because that would be wasteful, right? So it has to sit in the fridge, unused, until it grows whiskers. THEN I can throw it out and open a jar he likes. Raised In The Depression, meet I Don’t Have To Eat It If I Don’t Want To.
