Weather here has been summer one day and winter the next. One day, when it was winter, I made this soup.
It would be vegan, if I hadn’t put cheese on top.
Here’s what it is:
MA’s Chili Mac Soup-ish Thing
- olive oil
- chili powder
- cumin
- diced onion, if your husband can eat onions
- cooked macaroni noodles
- black beans
- diced tomatoes
- water
- vegetarian bouillon cubes
- tomato paste
- onion powder, if you don’t use diced onion
- chipotle pepper to taste
While the noodles are cooking, heat the olive oil in a pot and cook the spices (and onion, if you can use onion) until fragrant. Add everything, including the cooked noodles, and heat through. If one of you (<cough>Charlie<cough>) doesn’t like spicy food, add the chipotle pepper at the table to the dish of the one that wants it. Top with shredded cheese, vegan or otherwise.
Purty durn good.

November 8, 2017 at 12:22pmLooks good to me 🙂 I will have the cheese, and some oyster crackers, please. My Mister doesn’t mind spicy, but he hates pasta in his chili. As you may recall, I had three other young uns here last week when I made the chili and that made it 6 against 1 on the mac. We hadda mac it up. It Was Delicious!

November 8, 2017 at 12:50pmWhen the kids lived here, we had ones who did or didn’t like beans, meat, and pasta. So I made everything separate and everybody mixed their own. Kinda defeats the idea of chili, but it worked for us. Now I just make the pasta separately, so it doesn’t get all mooshy in the liquid overnight.
