Speargrass #Vegetarian

It’s quarter to Spring, and that means asparagus. Or, as Mom says she used to call it when she was little, speargrass. I think speargrass is a brilliant name for it. I think that ought to be its official name.

So I bought some at the grocery (because ours has died out, alas) and made this.

Angel hair pasta, pan-toasted speargrass, hard-boiled egg, shredded Italian cheese blend, the tag end of bottled Alfredo sauce, and a sprinkle of toasted bread crumbs.

Um yum.

    When I saw the title in my inbox, I was hoping you were talking about asparagus. This looks really good. I think I could even eat it veggie-style, although I really like asparagus with steak.
