Puff Daddy

I made this puff pastry for Charlie (my husband) for Father’s Day. I have Joey to thank for the recipe — Thank you, Joey! But I also didn’t use butter, because no got. So I looked around the interwebs and found this recipe for making puff pastry using coconut oil, which I have got. Next time, Imma try it with vegan margarine, which I have also got.

Joey says:

Easy Puff Pastry

  • 1 c all purpose flour
  • 1/4 tsp salt
  • 10 tsp cold butter (cut into cubes)
  • 1/3 c ice water

add flour to salt & stir

add butter and cut with a pastry cutter til the lumps are baby pea sized make a hole

put the ice cold water in the hole and fork it in (like pie crust)

roll it out an a lightly floured surface

this makes enough for 6 individual ramekins or 6 popovers or 6 rolls or 6 turnovers (spinach and cheese) (dates, walnuts, and bacon) (apples) (whatevs)

350, but just keep an eye on em depending on what you cook — i turn the turnovers

i have never frozen this dough, i imagine i could, but i literally make it as i go.

So I did all this, substituting cold (not too cold) coconut oil for the butter. I also rolled it and folded it, rolled it and folded it, and rolled it and folded it. Stuck it in the fridge for a bit. Then I cut it into squares, rolled each square kinda thin, and cut each with a donut cutter.

This would be better to do when the weather is cold, or if you keep your house cold in the summer, because that coconut oil (or butter or whatever) wants to liquefy. So you maybe stick what you’re not actually rolling into the fridge. I have a marble rolling pin that I put in the fridge. Rolling with a cold pin helped.

Okay, then I put the little rounds into a mini-cupcake pan. Non-stick.

I didn’t know how long it would take to bake. (20-30 minutes) One place I looked said to NOT bake them in a toaster oven. I was like, Uh-huh. And baked them in the toaster oven.

They came out like this.

After they cooled, I filled them with canned blueberry pie filling. I mixed confectioner’s sugar and lemon juice and drizzled the tops.

This is pretty much a simplified version of a recipe Charlie found in a magazine. He said, “It looks just like the picture!” They tasted great, too. Tasted kinda coconut oil, but we like coconut oil (which is why I have some, duh), so that just made them nicer to us. But I am gonna try this with vegan marg.

      Thank you for the sharing, Joey. I’ve wanted to make puff pastry for a long time, but I was afraid of it. (I’ll be honest: not much I’m NOT afraid of — just ask #4 Daughter.) Making these made me happy. 🙂
