About That Fish #Food #Recipe #InstantPot

Last week, I told you I would post about this, if I had a picture, and I did have a picture, so here it is:

Charlie informs me that he doesn’t like sticky rice. If you don’t like sticky rice, don’t rinse your rice before you cook it, and don’t put as much water in it. For this sticky rice, I rinsed some Jasmine rice, cooked it a bit in the Instant Pot in vegan margarine on saute, then added twice the water as rice. The Instant Pot says to use water (or other liquid) equal to the amount of rice.

Then I tore some fresh kale off the stems and layered that on top of the rice and salted water. I topped that with two thin frozen tilapia filets and sprinkled it with salt and lemon pepper.

Close the lid, set the cock to Seal not Vent, and set the Pressure to 20 minutes. I think. It might have been 15, but I think it was 20.

It was SO GOOD! Highly recommended.

I’m posting at Fatal Foodies about a dish we were not so enthusiastic about: a cauliflower casserole.

So, did I read this right? Charlie doesn’t like sticky rice but you made sticky rice?

I like rice just about every which way, and this looks good.

No, I didn’t make it clear: I made sticky rice and Charlie said he doesn’t like sticky rice. So I’ll only make sticky rice if I need it for sumpin or if he isn’t home for a meal.

OK, got it. I didn’t think you were the kind of person who, once informed of his not liking sticky rice, would go to great lengths to make the rice sticky.

That sticky Jasmine rice is the BEST. The clumps hold together when you do next-day fried rice. You can totally imagine eating it with chopsticks.
