Here’s another thing I don’t ever want to make any way other than in the Instant Pot!
Charlie loves stuffed green peppers, so I make them now and then. Not very often, because I have to cook the pepper first, then stuff it, then cook it all again. Notice I don’t say I cook the stuffing: I only make them when I have leftover rice.
So I had made rice and kale together–Oh, I should have posted that recipe first! Well, I’ll do it next week, if I remembered to take a picture.
ANYWAY, I had leftover rice/kale. I added some tomato paste, chili powder, cumin, and shredded cheese. I got all ambitious and chopped up two sausage links and cooked them and put them in, too. You could use beef or chicken or no meat at all. We’re light eaters (you’d never know it to look at me), so I halved and cored one pepper.
Here’s where I made my mistake: After putting a cup of water into the Instant Pot, I put a steamer insert in. I should have made little boats or something for the pepper halves to rest on the insert, because some of the stuffing leaked out and made the insert difficult to clean. But I didn’t; I just put each stuffed pepper half into the insert.
I set the thing (you know the thing) to Pressure, not Vent, and cooked it for 20 minutes, which means closer to an hour, because it has to come up to pressure then cook, then I forget about it while I check Facebook, you know?
So it came out like this:
The pepper was melt-in-your-mouth.

I made beef stew this morning in my Instant Pot for lunch. I am loving this new kitchen tool!
I’ve learned a trick to getting the pressure up quicker…even if not using the Saute feature turn it on while doing all your prep to warm up the pot. It will build pressure faster b/c it’s hotter to start with. I seared the beef cubes, then sweated the onions, garlic, and celery after deglazing the pot so, once I put the all the rest of the ingredients back in it came to pressure in 5 or 6 minutes.
I wonder if the peppers would do well in the double pots that I bought as an accessory to use in the Instant Pot for stuff just like your peppers. If anything fell out it would be in the little pot and still edible. Here’s a set like I bought.
