Charlie and I saw this recipe in the coupon magazine Kroger/JayC sends out:
Italian Made Easy: A Hearty and Flavorful Gnocci Dish to Warm up Cool Nights.
I decided to take it to Thanksgiving but, since our vegan daughter was coming, I decided to veganize it.
I left out the sausage, o’ course! Naturally, I added mushrooms, because mushrooms. No chili flakes because Charlie doesn’t like things too spicy. We didn’t have any green onions, so I used diced sweet onions. Instead of topping it with cheese, I took a package of Feta and put it on the side for people to add if they wanted to.
There were a few leftovers, and that was very good, indeed, with some pesto mixed in.
I’m posting today at Fatal Foodies about some quick and easy spaghetti and bread-ish-sticks.

Sadly, all these people are right.
And I would also eat it alone while reading a real paper book, if there was no company.
How I maintain a decent weight, is unknown!

November 28, 2018 at 4:18pmWell, a handful of diced tomatoes (One large or 2 small tomatoes!) in the whole pot, will not kill any diet. It, in fact, helps digestion. And they have lycopene, vitamins, minerals! And there would be added color. Now, if you only made enough for 2 plates, then ONE small tomato is in order. There is little caloric gain, there. Moreover, the added flavour, is scrumpdeli-icious! I worked in a restaurant for a number of years. (Do not let the glutton from Canada sneak in a 2nd small tomato!)
Now, as for the bacon bits, THEY are much more problematical. If you are like me, you just put on a pound. If, instead, you are REASONABLE, and just put a sprinkle on top, well, then that is OK.
