French-y Chicken Stew

So this happened:

Into my Instant Pot, I put:

  • frozen chicken thighs
  • baby bella mushrooms
  • frozen pearl onions
  • orange sweet bell peppers
  • sprig of sage
  • Penzeys Herbes de Provence
  • 1 cup of white wine

I put all of this in in the morning, selected Slow Cook, the Low setting, and 8 hours.

I took out the meat and veg with a slotted spoon, mixed some cornstarch with cold water, canceled the Slow Cook and turned on Saute, added the cornstarch water, and stirred until the liquid had thickened, then added the thickened liquid to the meat and veg.

Served it over Jasmine rice.

As #4 Daughter, the amazing Sara Marian said, it was ridiculously good!

I’m posting at Fatal Foodies today about the casserole I made with the leftover rice.

A WRITING PROMPT FROM ME TO YOU: Write about something that takes eight hours to do.

I was born in Louisville, Kentucky, but now live in the woods in southern Indiana. Though I only write fiction, I love to read non-fiction. The more I learn about this world, the more fantastic I see it is.
