French-y Chicken Stew

So this happened:

Into my Instant Pot, I put:

  • frozen chicken thighs
  • baby bella mushrooms
  • frozen pearl onions
  • orange sweet bell peppers
  • sprig of sage
  • Penzeys Herbes de Provence
  • 1 cup of white wine

I put all of this in in the morning, selected Slow Cook, the Low setting, and 8 hours.

I took out the meat and veg with a slotted spoon, mixed some cornstarch with cold water, canceled the Slow Cook and turned on Saute, added the cornstarch water, and stirred until the liquid had thickened, then added the thickened liquid to the meat and veg.

Served it over Jasmine rice.
