It’s been so dang HOT lately, we’ve been eating cold. Many people would say the heat makes them lose their appetites, but I’ve never had that affliction. When I go off my feed, call the doctor, ’cause something serious is wrong.
ANYWAY, I’m supposed to be on a low-carb diet, so my beloved bacon-lettuce-tomato summer go-to is under additional assault. I already usually eat it without the bacon, having done that by accident once and not noticed the difference.
So we had this, which includes bacon sprinkles, but didn’t have to.

Lettuce, tomato, dill pickle, bacon sprinkles (could be vegan “bacon” or could do without), and blue cheese dressing (could be vegan mayo or another dressing).
I can’t, for the life of me, remove a lettuce leave from the head without buggering it all up, so I used a knife and cut this into salad. If I could have removed a whole leaf, or had used, maybe a Romaine leaf, I could have wrapped this in the leaf and eaten it by hand.
Although I would have had to take a shower after, because the juices would have run down to my elbow and dripped onto my feet. I ought to eat finger food under a sprinkler.

July 23, 2019 at 8:01amThat works for a hot day meal. I think it could use bacon, but the thought of cooking bacon on a day when it’s a zillion degrees is not appealing.

July 23, 2019 at 8:18amRight. That’s where pre-cooked bacon or salad-ready bacon bits come in handy. That’s what I used: salad-ready bacon bits. Vegans could use the fake kind, or just sprinkle it with smoked paprika.

July 23, 2019 at 9:24amI like tuna and egg, too! We only eat blt (or plt–pickle, lettuce, and tomato) in the summer, when we can get fresh tomatoes. I’m a MAJOR fresh tomato fan. I can remember visiting family in the country one summer, where there was an outbuilding filled with tables, the tables filled with ripe tomatoes, and being told I could eat as many as I wanted. I was in heaven!
