So I made this eggplant casserole, and I posted about it yesterday.

When I made this dish, Charlie, who doesn’t care for eggplant, actually approved:

“This is really good–you can’t taste the eggplant at all!”

Somebody tried something similar on me once. But, I could still taste the potato- YECH!
But, I tried this yesterday and I’m with Charlie. It was great!
