BBQ Pulled Chicken #InstantPot

Before our favorite li’l grocery shut down because the owners moved to Florida, we bought a package of Amish-raised chickens’ breasts. Yeah, to my vegan/vegetarian friends, that does sound pretty ghoulish.

ANYWAY, I decided I’d better cook them before the freezer burned them, so I did them in the InstantPot. Three frozen chicken breasts on a rack with a little water, sealed, for I don’t know. 15 minutes, since I was going to cook them more, anyway.

But they were done. Took them out, re-froze two, and shredded the third with two forks.

Then I drained the water, took out the rack, and put the shredded chicken back in the Instant Pot with some Sweet Baby Ray’s Honey BBQ sauce and turned it on Saute, stirring frequently, for a few minutes. Hit Cancel and let it rest until the fries were done.

Sweet potato “fries” in the toaster oven. Yum!

We dipped the fries in Bear-Whippin’ Sauce.

      Nope. Nope. Not at all. I already have so many projects to work on, I couldn’t handle any more. How’s it going for you? I co-authored one story, which should be going up free pretty soon. 🙂

    Oh good gravy, that looks and sounds delicious. We don’t have an Instant Pot. We have about every other kitchen counter cookery thing there is but not one of those. I may have to correct that oversight.

      I use my Instant Pot in place of my pressure cooker, and sometimes in place of my slow cooker, if what I’m cooking is small enough to fit it.

    Anything pulled chicken is certainly where I’m at, especially cooked in a slow cooker or instant pot. I just made some today and then ate in some tacos with homemade salsa and cashew sour cream. Yum!
