Grilled Eggplant

I cooked all week, making food for the Per Bastet Publications room part at Imaginarium and I forgot to take pictures of the food!

So here’s this.

One of my favorite kitchen “gizmos”, as my husband calls them:

He doesn’t care for eggplant, and I love it, so I bought a wee little one at the farmers market and fixed it for myself.

I cut it in half and smeared it with olive oil and sprinkled it with Jane’s Crazy Mixed-Up Salt. I grilled it on one side, then flipped it, so it would have that lovely grilled criss-cross.

SO GOOD!

    Sooooo…. What is that toy? From the top, it looks like a coffee maker. But I don’t think you can do eggplant in one of those.

    Now I like pizza, Lesley does not. But now I am diabetic on insulin, so, pizza is something I avoid. I shall survive!

    Hey, where did the little happy sad etc buttons go?

      That “toy” is an indoor griller, Pete. Like the George Foreman, only cheaper. Which leads me to the happy sad etc buttons: They were only testing the product, apparently. Now they want me to pay for my readers’ emotions. I’m like, “I’ve been paying for my own emotions all my life; they can pay for their own. DELETE PLUG-IN”.

    I only like eggplant in certain situations. This looks like one where I might enjoy it. It would depend on how smushy it is inside. I don’t like a gooey texture

      You would NOT like this!!!!! It’s meltingly creamy inside. Swoonworthy to momgoths, cringeworthy to dans.
