Supposedly Irish Iron Skillet Potatoes

I’m pretty sure somebody on the FB shared this skillet potatoes recipe with me, but blamed if I can bemember who.

ANYWAY, it’s on the Kerrygold dairy products site, so go there for the recipe, because I actually followed it, for once. I generally just bung things together near enough for jazz, but I hadn’t tried cooking in my iron skillet for years. I’m astounded I could even put my hand on it.

Being around Joey must be rubbing off, because the skillet cooked this like a dream! People — get you an iron skillet! I haven’t fried anything in anything else since I made this.

Despite the vegan margarine (which I usually use) photobombing the picture, I actually used actual butter, which I had a knob of from when I made truffles. (We liked the truffles made with vegan margarine better.)

      We love ’em, too, but I’d never made them like this, or in my cast iron skillet. You’re right — ain’t nothin better than spuds!

      ~clears throat and settles down~ Yes, the Kerrygold products are, indeed, satisfactory. I’ve never had the pleasure of going to Ireland, but it’s on my bucket list, for sure.

      Oooo, latkes! I’ll have to try them again in the iron skillet. You use lots of oil, or just a little?
