Welcome to MA’s #QuarantineKitchen

We’re lucky: We live in the woods and I know a morel mushroom when I see one. Or more than one. Been out twice this season and found these:

I would like to go out every day, but the deer love them, too, and my mama taught me to take some and leave some. From what I hear of runs on grocery stores, not everybody’s mama taught them that.

ANYWAY, I halved these, soaked them in salted water for at least 15 minutes, dredged them in seasoned flour, and fried them in a schmear of vegan margarine (’cause we like vegan margarine).

We had some lima beans left the next time, so I threw in some corn and called it succotash. I had bought some polenta, so I fried some of that for bread.

That was mighty good eatin’!

This would probably work with storebought mushrooms, too.

    Creative dinner. I like it when you can use what you have on hand. I’ve never had mushrooms that weren’t from the grocery store. Impressed that you know how to do that.

      When we first moved over here, I met a woman who taught me about morels. They’re easy, because there’s no other mushroom that looks like them. Even the False Morel doesn’t really look much like the real ones, so I feel safe with them. The only danger is if I find an abundance and eat so much I get sick. lol That doesn’t happen often.

    This all looks good, but I seriously think lima beans are the worst thing to ever pop out of the ground. I’m also not fond of polenta and I don’t like those mushrooms.

    Can I pick out the corn?
