I had a craving. No, I’m not expecting. Not expecting anything but more fresh hell in the news.
So anyway, I wanted Thanksgivingy stuff.
I didn’t want a big hunk of meat, though, so we had this, which isn’t vegetarian, but isn’t a carnivore’s delight, either.
Baby spinach, pan-fried in vegan margarine with bacon bits. Instant cornbread stuffing. Cranberry sauce a la Bart with pecans on.
It satisfied.
I’m posting today at Fatal Foodies about salmon patties smothered in white sauce.
A WRITING PROMPT FROM ME TO YOU: Write about something for which to give thanks in troubled times.

June 9, 2020 at 8:58amFinished off the last of our spring spinach and added parmesan to top it off. Soooo good! But you can never have enough bacon 😉

June 10, 2020 at 7:57amI’m looking forward to someday finding a plant-based or no-harm bacon that’s almost as good as the real thing. I want to be vegan, but DAMN.

June 9, 2020 at 10:05amIt’s certainly photogenic! I’d vote for baby spinach and red beets- with or without nuts.

June 10, 2020 at 8:13amI have never made cornbread ever, but have enjoyed the storebought kind. Now I am curious to try, as inspired by you.

June 10, 2020 at 9:24amI’ll be honest: This was storebought Stovetop Stuffing cornbread variety. I do make home-made cornbread, but I usually make it in cakes, like pancakes, and we eat it with bean soup or chili.
