Giant Tomato or Baby Egg? #Vegetarian

It’s a baby egg. The neighbors got chickens that lay teeny wee eggs and gave me some. I had tomatoes from the farmers market, so I made a marriage in heaven.

Ever had fried ripe tomatoes? I slice mine thick and fry them at a moderate heat in vegan margarine until they’re browned and softish.

On this day, I cooked two of those baby eggs in the same pan and plopped ’em on the top.

That isn’t grease; that’s tomato juice and a little melted margarine, but mostly tomato juice. Perfect for sopping up with a piece of bread.

As my grandpa would have said, “Messy but nourishin’.”

    That looks pretty good. I sometimes substitute sliced tomatoes for hash browns when I order breakfast, Of course, I also sometimes order a short stack of pancakes on the side.

    That prompt sounded like the beginning of a science fiction story:

    She went every day to visit the baby egg. Through its translucent shell, her first child grew peacefully, with her heart sound piped in, and a gentle periodic rocking to simulate her walking around the kitchen…

      Charlie and I each had fried tomato at breakfast when we were in England, so we had them occasionally after we met and married. So good!
