Summer Burrito

#4 Daughter, the amazing Sara Marian, has been spending several nights a week with me. When she leaves on work days, I pack her a lunch. She’s perfectly capable of packing her own lunch, but I enjoy it.

Since it’s been hot and she’s been working in the field, mapping and troweling and such, I’ve been making a cold lunch for her to take in an insulated bag.

One day I made this, which doesn’t actually look very appetizing, now that I look at it.

It’s very thinly sliced summer sausage, Swiss cheese, and mayonnaise on a flour tortilla.

I rolled it up.

She said it was delicious.

That wasn’t all I packed her, but I don’t remember the rest. Go-to’s are Mozzarella sticks, yoghurt, fruit bars, cucumbers with dressing, and roasted almonds.

    That actually looks delicious. I love sausages like salami and csabai, spicy without being ‘hot’. 🙂

    It may not look like much but it sounds delicious. Cold lunches are the way to go this time of year.

      Our favorite summer lunch was fresh bread, local summer sausage, and good cheese.

    It sounds yummy. You’re a good Mom and I bet she appreciates the extra love that went into that roll up. Not to mention that’s what made it sooooo delicious! 🥰
