Colorful, Tasty Veg #Vegan #Vegetarian

Roasting makes pretty much everything better. Not, you know, ice cream, but you know what I mean!

I particularly like this tray, because it’s so colorful. If it’s pretty and also delicious, what’s not to love?

Whole fresh green beans, tri-color peppers, cleaned, tossed with olive oil and seasoned salt or whatever seasonings you like, baked at 450F on the top rack for about 20 minutes or until it starts to char.

A meal in itself!

    I would have thrown in some little new potatoes, and carrots too…if I had em. πŸ˜€ I love roasted veggies. Those do look yummy!

      I roast various veg depending on what I have and what I feel like having. Carrots are SO GOOD roasted!

    Oh, meant to ask if you’ve read The Book Woman of Troublesome Creek? Mom recommended it cause it’s about the book women of KY and Mom was born and raised there, and she’s a got a library science degree. πŸ˜€ She loves books and reading.

      I haven’t read it, but I just ordered it from Bookshop.org, which gives a proportion of the price to local bookstores. Thanks for the recommendation! Email me about your mom! What’s her name? Her maiden name? Where was she from? Where were her people from? I’m from Kentucky, too, and us Kentuckians want to know those things! Probably why I’m so at home in Southern Indiana — Us Hoosiers are the same way. lol

        I ordered it too and have begun reading it. It’s interesting already! Will look up your email and write to you about Mom. You’re younger so probably don’t know her. You might know my cousin? I have 2nd cousins in So. Indiana…well I did. Will have to ask Mom if they’re still there. After my Great Aunt and Uncle passed I lost track of everyone.
