Grills. They’re Not Just For Meat. #vegetarian

I’ve been told that eggs and dairy aren’t vegetarian. Okay, so they’re ovo-lacto-vegetarian. If you think I’m going to type that every time, you don’t know the level of laziness you’re dealing with.

ANYWAY, I did some veg on the grill. Cheese was involved. If I had access to good vegan cheese, I would have used it, okay? I mean, I can make some, but (see second sentence of paragraph one).

I had two gre’t big mushrooms and a red pepper. Those brown lumps in the background are Gardein meatless meatballs. I sprayed the veg with olive oil and sprinkled with Jane’s Crazy Mixed Up Salt.

While the veg were grilling at about 400-450F, mushrooms hole-side down, I took the mushroom stems, some kale, and some onions and cut them up and stir-fried them. I think I sprinkled them with Mrs. Dash. I think I also added a little Italian-seasoned breadcrumbs.

Halfway through the grilling (it took about 30 minutes in all), I flipped the mushrooms (I turned the pepper every 10 minutes or so) and put the meatless meatballs in the cups of the mushrooms. The last time I turned the pepper, I put some Provolone on top of the mushrooms/meatballs. After taking the veg off the grill, I sat the pepper on its bum, and filled the pepper with the stir-fry.

Man, that was one good meal.

      It WAS good. Not as good as grilled sweet potato slices, because that’s sheer heaven!

    You are far more ambitious with cooking than I have been for years. Also a bit more conscientious about what is allowed in a vegetarian diet. I definitely like your colorful menu and the use of cheese.

      At one time, I had two daughters and an almost-son-in-law who were vegetarians but ate eggs and dairy. Then a-s-i-l left the picture and the daughter who was with him reverted to omnivory. The other one moved on to veganism, although she still eats sugar and honey. I’ve known various flavors of vegetarians/vegans in my time, and I’m what anthropologist Barbara J. King calls a “reducitarian”: I still eat meat, but not every meal every day, and I prefer what I do eat to be locally sourced.

    YUM! I love this…and now I am really wishing I could have a grill again. Although I do love to eat meat, I also love vegetarian (and even some vegan) dishes. I guess I am what is called a “flexitarian”…I call myself an opportunist when it comes to food. If I have an opportunity to eat something (especially prepared by someone else), I will! Hah!

      “Flexitarian” — YES! This portable grill was fairly cheap, since I got it for investing in the product on one of those crowdfunding sites. It does need a lot of space, though, for heat dissipation, so definitely not a small-space portable! I was actually looking for a small hibachi when this caught my eye. Hibachi’s are bitsy and cook fast. But I was excited to see something that could also smoke stuff. So….

    I’m a big fan of the roast or grilled veg. There’s a Syrian gilled eggplant dish I’m trying this weekend – it might even be next month’s #whatsonyourplate…unless I think of anything else in the meantime!
