There’s a thing called Door Dash that just came to Corydon. Door Dash is probably old news to fancy city folk, but here on Walton’s Mountain, it’s new.

I used to belong to groups that occasionally met at Beef O’Brady’s (I still belong to the groups, but we haven’t met since the Before Times). I got to missing the food, so I ordered the steak fajita trio to split with Sara. It’s supposed to be an entree for one, but for one what? For one linebacker? For one Incredible Hulk?

At any rate, we ate an elegant sufficiency and had some left over.

SO.

I mixed the leftover fajita meat with some leftover refried beans and some leftover corn, and put it in a casserole. I had part of a jar of queso blanco, so I topped it with that and baked it until it was hot through.

We had it over rice with the lettuce and cheese left from the order. Oh, that’s a little hot sauce from the order on the top.

There’s no such thing as “not enough of it to save”.

      Thanks, Dan. Charlie always resented restaurants serving massive portions, but I always took the leftovers home and made at least one other meal with them, so I never complained. 😀

    When I moved to the city, I fell in love with Door Dash, A little too much ($$$$$), if you know what I mean. I’ve gotten it under control now and only order a couple times a month. But it is a God’s send when I don’t feel like cooking.

      I do know what you mean about Door Dash. I don’t know how much I’ll use it, now that the free delivery intro has run out. What’s that? I’m cheap? Yeah, a li’l bit. 😀

    Nicely done. I tell ya, a lil rice or pasta, and leftovers go a long way for a good lunch! Door Dash is fabulous, if pricey. At least it’s a thing for you now.

      It’s like six bucks for delivery, but when you live out where the deer herds roam, it beats putting your shoes on, hitching up the buckboard, and headin’ into town. Not something I’d pay every day, but worth it now and then.

    We feasted (the second night of Rosh Hashana on vegetarian Kasha Varnishkas, tomato soup, sweet potato tzimmes, and chocolate peanut butter ice cream. Woo Hoo!
