I actually pretty much followed the recipe on this one, although I didn’t stick the skillet under the broiler to toast the cheese. Reckon I was hongry. It was still delicious.
I even went so far as to buy the actual name brand. This is Kerrygold Irish Stove-top Potatoes.
If you had access to a good vegan cheddar “cheese” and good vegan margarine, you could use that instead of the dairy.
You could totally slap in some bacon or ham, if you’re a meat/pork eater. Or, I guess, ground beef or sumpin. Shrimp. Whatever.
But this was really good as it was, especially the toasty bits on the bottom and sides.

November 3, 2021 at 10:25amI’m a huge potato fan. I would eat these as they are. You know, I’ve never owned an iron skillet. My mom does and makes the best fried chicken in it, but I’ve never made fried chicken. I love it, but just don’t eat fried foods very often. 🤷♀️
