Sara made vegan mashed potatoes for Thanksgiving and there were some left over, because somebody else made a honkin’ big pot of buttery ones and those went first.
We split the leftovers. I chopped up some onions and some leeks that were about to join the choir invisible and fried them in vegan margarine. Then I added the potatoes and cooked them all until the bottom of the mess was brown.
Then I ate it ALL.
GROAN — so good, but I was, as Middle Grandson used to say when he was wee, ‘tuffed like a teddy bear. Much more ‘tuffed than I was on Thanksgiving!
