Speedy, Not Small #Food

My grandpa’s and my mom’s favorite restaurant dish was country-fried steak. Some places make that with ground steak, but their favorite kind was made with minute steak. That’s “MINnit”, not “miNYOOT”.

I scored some minute steaks at the farmers market this summer, and froze them until I was in the mood.

You season some flour with salt, pepper, and whatever herbs and spices you like and press the flour into the steaks. Then you sear the steaks in oil until they’re brown. They’re probably done, but I like to turn the heat down, cover the pan, and steam them until they relax.

Meanwhile, make some mashed potatoes. Take the steaks out of the pan, turn the heat back up, and make some milk gravy. Add some more pepper, if you like it peppery. It is possible that my mashed potatoes had corn mixed in, because mashed potatoes with corn mixed in is MY favorite dish.

If you can cut it with a fork, you did it right.

      No, I call it chicken-fried or country-fried steak. Although it is gloppy. You ain’t from the Kentuckiana area, if you don’t want milk gravy on everything.

    I love mashed potatoes with corn mixed in!

    The meal looks wonderful, but mashed potatoes with corn mixed in covered with gravy could be a meal in itself for this boy.
